Bike Trip Part 1

Friday morning we met bright and early in Bountiful and did a long day of driving to Portland. The crew consisted of: Andy B, Bri, Andy N, Brooke, Tony, Chris, Evan and me :) The drive was pretty uneventful except for losing the tread off the tire on the trailer which in turn took off the fender/wheel cover on the trailer. So the menfolk changed the tire and we stopped at Les Schawb and bought another new tire. We arrived in Portland and stopped at the airport to pick up Blake and Gary. Then we headed off to Lake Oswego (sp) where we had a hotel for the night. Early the next morning Andy B went to pick up Jesse who lives in Portland. We loaded everything back up into the trucks and off we went to start in Lincoln City. Lincoln City was holding their annual Kite Festival. I took a couple of pictures of kites. Pretty awesome. We unloaded and prepped our bikes. That took awhile. We left my truck and Evan went ahead with the other truck and trailer. It was rather chilly and it was hard to decide what to wear. We started off down the coast. This first day was a coastal ride. This was one of my favorite days. The wind was blowing so we had a nice tail. Nothing is flat. There is always a up and down. It was nice when the bike trail took off the main highway. There is not any shoulder on the highway.

White Texas Sheet Cake (from PD mag)

2 Cups Flour
2 C. Sugar
1 tsp. salt
1 tsp. baking powder
1 C. butter
1/2 C. sour cream
2 eggs lightly beaten
1 tsp. almond extract
1 Cup of water

In a saucepan combine butter and water;bring to a boil stirring occasionally. In a seperate large bowl combine the flour,sugar,salt and baking powder.
After the butter/water comes to a boil add to flour mixture stirring to combine it. Stir in the sour cream, eggs and the almond extract. Pour into greased cookie sheet and bake @350 for 22-25 min. Frost cake while still warm with Butter Frosting (see below)

Butter Frosting

1/2 C. butter
1/4 C. milk 1/2 tsp. almond extract
3 Cups powdered sugar
Bring the butter and milk to a boil stirring occasionally. Remove from heat whisk in the almond extract and then gradually whisk in the powdered sugar.
